Red & green Brussels Sprouts with bacon and shallots
Ingredients
25 Brussels sprouts (a 50:50 mix of red & green sprouts, halved)
1 clove of garlic
3 shallots, peeled and diced finely
1/2 cup chicken stock
6 rashers of bacon, diced
Salt and pepper
Method
1. Heat a large fry pan with olive oil.
2. Add shallots, garlic and bacon to pan, and fry until bacon is crispy and onion is soft.
3. Add the halved Brussels sprouts to the pan, and fry for 4 minutes.
4. Add the chicken stock, to complete the cooking of the Brussels sprouts and simmer until the sprouts are tender and the stock has evaporated.
5. Season with salt and pepper.
