• Flavour is very similar to standard white cauliflower
• When used raw, purple cauliflower has a crunchy texture with a mildly sweet brassica flavour
• When roasted, it develops a sweet, nutty flavour. The natural sugars in purple cauliflower caramalise quickly when roasted or barbecued giving dark brown colours and a sticky sweet taste
- Place purple cauliflower heads in a loose plastic bag in the fridge, and they will keep for around 2 weeks
- A great tip is to cut the florets off the purple cauliflower head when you bring it home, so that it is ready for use. When florets are placed in a sealed plastic container or bag, they will keep for about 1 week
- Purple cauliflower is best transplanted into the soil at 25-30cm intervals
- Depending on the season, it will take around 2 to 3 months to form a head
- The head is ready to harvest when it reaches a diameter of about 12-14cm

- The vibrant purple head colour is due to the presence of anthocyanins, (nutrients responsible for pigment in fruits and vegetables) which also serve as powerful antioxidants

- Purple Cauliflower is often stocked as part of a ‘Super-Food’ range at Bunnings Warehouse in Australia, occasionally you can also find it at other home garden nurseries from time to time.
- For commercial growers, simply contact your regular commercial nursery for supply.
Produce
- Unfortunately supermarkets don’t often stock purple cauliflower, but often you will find that good greengrocers do.
- Chefs, providores and green grocers should contact their local vegetable growers or wholesale agents to request this product.
