Roast Broccoli with Lemon & Pine Nuts


2 heads of broccoli

2 clove of garlic

3 tbsp of olive oil

Salt & pepper

1 tsp lemon zest

2 tbsp lemon juice

3 tbsp pine nuts, toasted

1/3 cup of finely grated parmesan cheese


  1. Line a baking tray with baking paper, and heat oven to 220oC.
  2. Cut the broccoli florets from the main stalks, leaving a 3-5cm stalk on each floret.
  3. Place the broccoli florets on your prepared tray, in a single layer.
  4. Toss the broccoli with garlic and olive oil.
  5. Sprinkle with the salt and pepper, and roast for 20 to 25 minutes, until crisp-tender.
  6. Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan.
