Red Chinese Cabbage (Purple wombok) Asian coleslaw
Ingredients
1/2 Red Chinese Cabbage
1/2 Green Chinese Cabbage
2 spring onions
1 cup coriander leaves
2 carrots
2 tbsp. sesame seeds
1 cup of slithered almonds
2 x 100g packets of fried noodles
Dressing
1/4 cup peanut oil
2 tbsp. Chinese cooking wine
2 tbsp. caster sugar
1 tbsp. soy sauce
2 tsp finely grated ginger
2 tsp sesame oil
Method
1. Combine all ingredients of the dressing in a jug, and mix to combine. Set aside.
2. Place the sesame seeds in a dry non-stick frypan over medium heat, stir constantly until lightly browned. Transfer to a bowl immediately.
3. Peel carrots, and cut into thin matchsticks. Place in a bowl with shredded Chinese cabbage, sliced spring onions, roughly chopped coriander, almonds and noodles.
4. Drizzle with dressing and toss to coat.
5. Sprinkle with sesame seeds to serve.
