Raw Broccoli Salad


1 bunch of rain chard

1/2 cabbage head

1/2 red cabbage head

2 carrots

1 small can of sweet corn

Coleslaw dressing

1/2 cup of whole egg mayonaise

1 tbsp lemon juice

1 tbsp Dijon mustard


1.       Place mayonnaise, lemon juice and Dijon mustard in a small bowl, stir to combine well.

2.       Slice the stems of the rainbow chard finely to make 1/2 circles.

3.       Finely slice the cabbage, and grate the carrots.

4.      Combine all the vegetables and mix well.

5.       Stir through mayonnaise mixture, and stir well to ensure everything is well coated. Season with salt and pepper to taste.

Tip: For extra bite/crunch, add some slivered almonds. For extra sweetness, try adding a small amount of sultanas.
